Green Lobia, also known as Chawali or Boda, is a nutritious and tasty vegetable that is prepared quickly. This dry vegetable tastes perfect with roti, paratha or dal-rice.

Servings: 3-4 people
🥗 Content
250 gms green beans (chawli/boda), washed and chopped
2 tbsp oil
1 pinch asafoetida
1/2 tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp red chilli powder
1 tsp coriander powder
1 tsp ginger paste
Salt to taste
1/2 tsp lemon juice or dried mango powder (optional)
👩🍳 Method of making
Heat oil in a pan and add asafoetida and cumin seeds to it.
When the cumin seeds crackle, add ginger paste and fry for 1 minute.
Add chopped beans and fry for 2 minutes.
Add all the spices (turmeric, red chilli, coriander powder, salt) and mix well.
Cover and cook on low flame for 10-12 minutes, keep stirring in between.
When it becomes soft, turn off the gas and add lemon juice.
💡 Tips
Do not overcook the vegetables to keep them crisp
You can add garam masala to enhance the taste
